the fruit was hand harvested on october 22nd. half the fruit was added to 1-ton fermenters whole clus ter and the rest was crushed, destemmed and added on top. the fermen ters were pumped-over twice daily until they had reached 10ºbrix and then were pressed off. the fermentation finished in stainless steel and remained there until bottling in may 2024.
